Meanings
- meat dish cooked in a jar

Usage
Tanjia is the emblematic dish of Marrakech. Meat, often beef shank, is put in an earthenware jar with garlic, cumin, smen and preserved lemon. The jar is sealed, then handed over to the keeper of the hammam's furnace (the ferran), who lets it cook slowly in the embers. It is traditionally a men's dish, prepared among friends for an outing. The word refers to both the dish and the jar. Do not confuse it with tajine, which is cooked in a dish with a conical lid.
