frik فريك
Tunisian Derja · noun
“frik” (فريك) is a noun in Tunisian Derja meaning cracked green wheat.
Meanings
- cracked green wheat
- frik soup (chorba frik)
Usage
Frik is wheat harvested green, roasted, then cracked. Its important place in Tunisian cooking comes mainly from chorba frik, a lamb or chicken soup with tomato and spices, traditionally served during Ramadan with brik. People often say simply chorba frik, or even just frik, to mean the soup itself. It is bought by weight at the grocer's or at the market. It should not be confused with borghol, another cracked wheat preparation, nor with dchich.
